How do we delete fulfilled order details from our account please?

We can’t delete old order details - I did raise it with folksy as part of the GDPR discussion (whether they would be automatically deleted after a certain time or not) but never got an answer. I would contact support (support@folksy.com) and ask them to do it for you.
