Is there a way of listing how many of each variation you have, rather than just having to list for example ‘2’, when in fact you only have one in each of two different colours?

No this is a reason why I don’t use it as can only put the quantity for one colour.
On a couple of my items I add how many are available on the variation itself. So if the variation is colour I would put, for example, Yellow (2 available), Blue (3 available) etc. I then just edit the amount after one’s been purchased. It’s worked for me so far.

I have tried that but it doesn’t stop a customer ordering more than I say I have…

I believe so, When you list. But you could also put pics up of both of them, stating that you have 2 pendants in the description and please can they message you the ones they want.
